Now that we basically devoured our favorite dip; I honestly couldn’t wait till tomorrow to give you all the sweet deets of this recipe — here’s something yummy & quick you can make for any in-home date-night or for whenever this whole quarantine is over and you can finally have a friends & family gathering!
3 Cans of Tuna
1 White Onion (diced)
How it’s Made :
Drain cans of tune and make sure that there’s no remaining liquid, you won’t want the consistency to be watery. You will continue by adding each ingredients individually and mixing in between each ingredients.
Dice the white onion & mix into the tuna.
Squeeze the lime & mix into tuna.
Add 2 tablespoons of Mayonnaise & mix into tuna.
Start adding Curry powder and mix until the tuna starts turning green or to taste.
Chop cilantro & add into mixture.
Add dried cranberries & sliced almonds to taste and mix all together.
As you may all know, I’m totally obsessed with cooking & trying out new recipes that will put me out of my comfort zone. I personally love to eat and it’s nice when you get to be the one behind the magic of prepping a meal. For a while now, many of my insta followers have been asking me to share a few of my recipes + share vlogs on how I prepare my meals. At first I was a bit skeptical, because in all honestly I’m kinda video/camera shy lol! It’s easy to be scared of trying something new, but you can’t fully judge something if you haven’t given it try. I feel like, we as humans allow ourselves to feel like trying something new isn’t always the right idea, because we’re scared of the feedback we’ll receive from it. And sometimes getting ourselves out of that comfort zone can be hard, but I’m glad that I took this opportunity to not only collaborate with such a yummy company (literally 😂 ), but also allow myself to do something different with my content & maybe open up more room for something that was actually fun to do!

Alex & I received our first package last week on Wednesday, and I was so excited to get my cooking on, that same day. But if you’re not up to cooking right away, most of their ingredients can stay from 3-5 days in the fridge, before they start going bad. Our package included 2-servings of the following 3 meals :
Cotija-Crusted Pork Chops
Maui Pork Tostadas
Hot Jalapeño Jelly Glazed Salmon
The Salmon was our first choice, because I was dying to taste that Jalapeño Jelly Glaze (I absolutely LOVE spicy 🌶 food) and to be honest it wasn’t extremely spicy, it was the perfect touch of spiciness! So Alex was definitely able to enjoy it as well. Here’s a quick look at the ingredients + step-by-step recipe that Home Chef provided for this meal :
Hot Jalapeño Jelly Glazed Salmon w/ Crispy Onion Asparagus:
Ingredients : (2 servings)
Crispy Fried Onions 1oz.
Hot Jalapeño Jelly 2oz.
Pecans 0 1/2oz.
Salmon Fillets 12oz.
Seasoned Salt Blend 0 1/2tsp.
Olive Oil 2tsp.
Start the Salmon : pat salmon dry, and season flesh side with a pinch of salt & pepper. Place a medium non-stick pan over medium heat and add 2tsp. of olive oil. Add salmon, skin-side up, to hot pan and sear throughly until golden brown and salmon reaches a minimum internal temperature of 145 degrees, 4-6 minutes per side. While salmon sears, cook asparagus.
Cook the Asparagus : trim woody ends off asparagus. Place a large non-stick pan over medium heat and add 2tsp. of olive oil. Add asparagus and seasoned salt to hot pan. Stir occasionally until lightly charred and tender, but still crisp, 8-10 minutes. Remove from burner and stir in pecans and crispy onions.
Finish the Salmon : remove pan with salmon from burner & top with jalapeño jelly. Gently flip salmon until coated with jelly. Jelly will loosen up as it heats.
Finish the Dish : plate dish as pictured on front of card & Bon appétit!
Honestly, it was the simplest meal ever & it was so full of flavor! Alex & I really enjoyed prepping this meal together (even though Alex was mostly behind the camera making sure we covered the whole prepping process)! Home Chef definitely goes above and beyond to provide everything that you might need for your next meal + the quality of their ingredients speak for themselves when you take that first bite. Now that a week has passed by & we’ve tried the other 2 meals that arrived in our 1st package, I can fully say that Home Chef is definitely worth a try. It’s officially Fall Ya’ll, and I couldn’t be any happier! Fall truly is a wonderful time of the year, besides Christmas, it’s like once that clock hits Fall O’clock everything is much nicer. I guess it’s because it means that the Holidays are much closer, and people are finally getting into a much merrier mood! Although we don’t really get to experience all of what Fall has to offer down here in South Florida, we as true Miami-ans, really try to savor in the little things about Fall. From decking out our homes with Pumpkins, to eating anything & everything that contains Pumpkin Spice and wearing flannel shirts with our ankle boots! We honestly don’t waste any time when it comes to Fall!
So, I thought what better way than to celebrate the fact that it’s officially Fall, than with a “Fall 2019 Bucket List”! Given that our trip to Las Vegas was amazing in so many ways, Alex & I decided to add onto that success and head out to San Francisco. Having the opportunity to visit the city after a couple of years was definitely worth it. For not only did I get to enjoy everything for a second time but since I returned as an adult I got to cherish a lot of places that as a child went over my head. While there we got to visit some beautiful places in the city and even got to squeeze in a visit to Napa Valley, which is a definite must if you’re planning a trip to San Francisco! Little did I know that for those who live in San Francisco, Napa is the place to be for many to make day trips. It’s basically the equivalent of what Walt Disney World is for many Floridians, except there’s more wine instead of Mickey Mouse.
Having experienced Napa Valley I definitely can see why it is that locals come so often, it was without a doubt the highlight of our trip. It began with Alex & me renting a car near our hotel in Union Square and driving up to Napa at 3:00AM, having to make it to Napa at exactly 5:00AM. Luckily we made it right on time for our hot air balloon ride which was lifting off at 5:30AM. Being the planning type, Alex had pre-booked our flight through Napa Valley Balloons and the option we got was the one that offered the ride with a post-flight brunch including unlimited mimosas at Domain Chandon California. Before Alex booked our flight, he had done some research as to which company was the best to go with, since there’s so many to choose from. He eventually stumbled across the company we chose because of all their great reviews and a specific pilot that had 30+ years of experience in maneuvering those bad boys. Obviously we were very interested in finding someone who knew how to safely fly the hot air balloons cause plummeting from that height was not in my plans. Not only that but we were also interested in someone who would make the flight 10X better with their personality and that was definitely the case with ours.
Our pilot’s name was Bob and he not only lived up to his expectations but exceeded them. Besides being very knowledgeable in everything hot air balloon related, he was also very funny & was able to make our flight over Napa, which lasted about 1 hour & 20 minutes, very memorable. We flew out 20 miles from our departure location, which was not the same time length or distance as that of other flyers there. Getting to see such amazing scenery over the Napa valley with a beautiful sunrise was truly worthwhile and I’ll definitely cherish this moment for the rest of my life.
After our flight, we filled up on a very delicious brunch and as soon as we got over the various glasses of mimosas we decided to drive up to Castello di Amorosa. Showcasing some of the best wines in all of Napa Valley this authentically styled 13th century Tuscan castle & Winery was a perfect follow up to an already amazing day. The wine alone is totally worth the drive there, since it’s only sold here, but if you need another reason to go then the castle would definitely be it. You get to roam around the castle with a tour guide and learn about the history behind it all. Plus included in the tour, you get to taste 6 different glasses of wine and actually see how they are made.
Although Napa holds about 400+ different wineries, one day alone isn’t enough to actually enjoy Napa to the fullest. But with the very little time that we had in California, one day was totally enough to say that we completely fell in LOVE with Napa. So much so that I’ll definitely be coming back there some day and get to experience the magic all over again that this place has over any who visit it.
