Slow Cooker Chinese Spare Ribs + Chinese Fried Rice Recipe :

Today I woke up in the mood to cook, but to cook something totally out of my comfort zone. Since I was planning on relaxing the whole day at Casa Lizano today, I thought what better day than today, to make some yummy Baby-Back Ribs in our Slow Cooker! So here’s a little recipe for the next time you decide to bring out your Slow Cooker for some yummy ribs :

Slow Cooker Chinese Spare Ribs Ingredients :

  • 3 LB Baby-Back Ribs of your liking
  • 1/4 cup of Soy Sauce
  • 1/2 cup of Raw Honey
  • 1/3 cup of Hoisin Sauce
  • 1 1/2 teaspoon of Chinese Five Spice Powder
  • 2 tablespoons of Sugar
  • 3 tablespoons of Sweet Chili Sauce
  • 5-6 gloves of Garlic minced
  • 2 teaspoon of Cornstarch
  • Sesame Seeds
  • Green Onions
  • Chili Powder (to liking)

  1. The day before you’re planning on making these ribs try to marinade them for at least 12 hours or longer, so the ribs can suck up all the juices from the marinade sauce that you’ll be preparing. In a small bowl mix the soy sauce, honey, hoisin sauce, five spice powder, sugar, sweet chili sauce, garlic and chili powder (to your liking).
  2. Once all of the above are mixed, cut the ribs between the bones to give individual ribs and place them in a larger bowl or freezer bag, so you can pour in the marinade sauce over the ribs, and don’t forget to allow them too sit in the marinade for at least 12 hours or more for a flavorful taste!
  3. Place ribs and marinade in slow cooker and cook on low for 6 hours or on high for 4 hours. (I personally cooked it for 4 hours on high.)
  4. Once the slow cooker finished cooking, remove ribs from slow cooker and place them on a foil lined baking sheet.
  5. Remove the top layer of fat from the juice in the slow cooker, pour the remaining liquid into a small saucepan and whisk in 2 teaspoon of cornstarch on low, so that the sauce thickens.
  6. Brush thickened sauce over ribs and broil the ribs for about 5-6 minutes so the sauce is able to caramelize on top.
  7. Garnish with green onions and sesame seeds if desired!

Chinese Fried Rice Ingredients :

  • Cooked Rice
  • 4 Eggs
  • 1 can of Diced Carrots
  • 1 White Onion
  • Diced Green Onions
  • 1 can of Peas
  • Freshly-minced Garlic
  • Soy Sauce (added to taste)
  • Butter (best way to stir fry the rice, rather than oil)

How it’s Made :

  1. Using cooked chilled rice is the best way to make some yummy fried rice, you’ve gotta plan ahead and use throughly chilled rice. A fresh batch won’t do the trick, so I suggest making the rice earlier in the day and storing it until you’re ready to make your fried rice.
  2. In a sauté pan, scramble your eggs using a small pat of butter, breaking them into small pieces as you go. Then transfer the eggs to a separate plate, and set aside.
  3. Sauté your veggies and garlic with the remaining butter altogether until they are throughly cooked.
  4. Scooch the veggies over to one side of the pan, melt some more butter in the other half of he pan, and add the chilled rice and soy sauce. Then stir to combine with the veggies and continue sautéing the rice altogether, stirring for a full 3 minutes, or until you notice that the rice and veggies are starting to brown slightly.
  5. Remove pan from heat and stir in your green onions, sesame seeds and scramble eggs.
  6. Give the rice taste, and season with some salt and pepper to your liking!

Now that we basically devoured our favorite dip; I honestly couldn’t wait till tomorrow to give you all the sweet deets of this recipe — here’s something yummy & quick you can make for any in-home date-night or for whenever this whole quarantine is over and you can finally have a friends & family gathering!

Ingredients :

  • 3 Cans of Tuna
  • 1 Lime
  • 1 White Onion (diced)
  • Mayonnaise
  • Curry Powder
  • Cilantro (chopped)
  • Dried Cranberries
  • Sliced Almonds

How it’s Made :

  1. Drain cans of tune and make sure that there’s no remaining liquid, you won’t want the consistency to be watery. You will continue by adding each ingredients individually and mixing in between each ingredients.
  2. Dice the white onion & mix into the tuna.
  3. Squeeze the lime & mix into tuna.
  4. Add 2 tablespoons of Mayonnaise & mix into tuna.
  5. Start adding Curry powder and mix until the tuna starts turning green or to taste.
  6. Chop cilantro & add into mixture.
  7. Add dried cranberries & sliced almonds to taste and mix all together.
  8. Serve with Ritz Crackers & Enjoy!

I mean, who doesn’t love a good ol’ Sunday Brunch? I sure do! Alex & I love going to Bonefish every once in a while for Sunday Brunch, but recently we’ve been brunching from the comfort of our home, because who doesn’t love a lazy Sunday? Especially when you get to enjoy it in the comfort of your favorite PJ’s & Slippers! Alex normally works 11-days straight & then has a 3-day weekend, so we always try to make the best of it whenever he’s got the whole weekend off. And what better way than to celebrate his Sunday off than with brunch?

I’m normally an early bird, no matter what day of the week it is. So while Alex takes a break from his early morning routine for work, I prepare some yummy breakfast & every little thing that we will be needing for Sunday Brunch; Mimosas DUH!💁🏼‍♀️🥂 So, I thought it’d be nice to share a few of my favorite recipes for your next Sunday Brunch, I hope ya’ll can enjoy!

Western Omelette or Scrambled Eggs :

Alex & I love either of the two, especially when they are packed with yummy ingredients; which is why we always stick to the Western one. Plus it’s super easy to make, and omelettes/scrambled eggs in general are a great choice for a low carb breakfast, because they pack you full of protein and keep you full for quite a while easily.

Ingredients :

  • 1 tablespoon butter
  • 3 large eggs (in our case 4-5 large eggs, depending how hungry we are)
  • 1/2 cup onion finely chopped
  • 1/4 cup green bell pepper/red bell pepper finely diced
  • 1/4 cooked ham chopped
  • 1/4 cup sharp cheddar cheese
  • Salt/pepper to liking

How it’s made :

  1. In a medium bowl beat the eggs well & set aside.
  2. I’m an 8-inch skillet 🍳, melt 1 tbsp of butter, then add in the onion & sauté until tender.
  3. Add in bell peppers and fry until the onions are softened to your liking and the bell peppers are tender crisp.
  4. Add the ham and cook for one more minute while stirring.
  5. Pour the eggs mixture over top of fried ham/vegetable mixture.
  6. Turn down the stove heat to low and cover with a lid for about 4-5 minutes.
  7. Once the eggs are solid and cooked almost through, flip the entire circle and cook for one more minute. But if you’d prefer to eat some yummy scrambled eggs, just scramble them up while adding some cheese & skip the following two steps down below!
  8. Place the cheese on one side of the omelette and fold over the omelette into a half circle shape.
  9. Let the cheese melt inside and then serve.

Homemade Pancakes :

I’m obsessed with pancakes, so whenever I get the chance to munch on them…I definitely do just that!😜 Check out these easy to make homemade pancakes 🥞 from scratch! (Plus, besides adding some sweet syrup; you can also top them off with some freshly cut strawberries & whipped cream!)

Ingredients :

  • 1 1/2 cups of all purpose flour
  • 2 tsp baking powder
  • 2 tsp sugar
  • 1/2 tsp salt
  • 1 egg (beaten)
  • 1 1/2 cup of milk

How it’s made :

  1. Mix in all the dry ingredients together in a large bowl. (Flour, baking powder, sugar, salt)
  2. Whisk egg in a small bowl and add to the above flour mixture along with the milk.
  3. Stir together, until well blended and pour onto hot greased griddle.
  4. Wait until pancakes are bubbling and cooked around the edges and flip.
  5. Garnish with freshly cut strawberries 🍓 & some yummy whipped cream.

Sides :

I normally always like to have a couple of sides to pair with the Omelette/Scrambled Eggs 🍳& Pancakes 🥞 ; so I always tend to make some wheat or classic toast with butter or jelly. And of course we can’t forget the BACON 🥓; bacon is completely necessary for a Sunday Brunch @ Casa Lizano!

Mimosas :

Oh, and we can’t forget the Mimosas either🥂, the most important part of it all 😆! Here’s what I consider the perfect mix for a Mimosa :

Ingredients :

  • 1/4 cup pulp-free orange juice
  • 1/4 cup + a splash 😆 sparkling white wine (my personal recommendation would be Prosecco)

How it’s made :

  1. Pour 1/4 cup of orange juice into a champagne flute (this should fill nearly half of the glass).
  2. Pour 1/4 cup of Prosecco into the flute; and of course top it off with some extra splash..you can just eyeball it lol! (I’ve found that, that extra splash is exactly what the drink needs to go from good to GREAT! 🥂
  3. If you’re like me, you can just garnish it with some of the extra freshly cut strawberries 🍓!

As you may all know, I’m totally obsessed with cooking & trying out new recipes that will put me out of my comfort zone. I personally love to eat and it’s nice when you get to be the one behind the magic of prepping a meal. At first I was a bit skeptical, because in all honestly I’m kinda video/camera shy lol! Alex & I received our first package last week on Wednesday, and I was so excited to get my cooking on, that same day. But if you’re not up to cooking right away, most of their ingredients can stay from 3-5 days in the fridge, before they start going bad. Our package included 2-servings of the following 3 meals :

  • Cotija-Crusted Pork Chops
  • Maui Pork Tostadas
  • Hot Jalapeño Jelly Glazed Salmon

The Salmon was our first choice, because I was dying to taste that Jalapeño Jelly Glaze (I absolutely LOVE spicy 🌶 food) and to be honest it wasn’t extremely spicy, it was the perfect touch of spiciness! So Alex was definitely able to enjoy it as well. Here’s a quick look at the ingredients + step-by-step recipe that Home Chef provided for this meal :

Hot Jalapeño Jelly Glazed Salmon w/ Crispy Onion Asparagus:

Ingredients : (2 servings)

  • Asparagus 12oz.
  • Crispy Fried Onions 1oz.
  • Hot Jalapeño Jelly 2oz.
  • Pecans 0 1/2oz.
  • Salmon Fillets 12oz.
  • Seasoned Salt Blend 0 1/2tsp.
  • Olive Oil 2tsp.
  • Salt pinch
  • Pepper pinch

Recipe :

  1. Start the Salmon : pat salmon dry, and season flesh side with a pinch of salt & pepper. Place a medium non-stick pan over medium heat and add 2tsp. of olive oil. Add salmon, skin-side up, to hot pan and sear throughly until golden brown and salmon reaches a minimum internal temperature of 145 degrees, 4-6 minutes per side. While salmon sears, cook asparagus.
  2. Cook the Asparagus : trim woody ends off asparagus. Place a large non-stick pan over medium heat and add 2tsp. of olive oil. Add asparagus and seasoned salt to hot pan. Stir occasionally until lightly charred and tender, but still crisp, 8-10 minutes. Remove from burner and stir in pecans and crispy onions.
  3. Finish the Salmon : remove pan with salmon from burner & top with jalapeño jelly. Gently flip salmon until coated with jelly. Jelly will loosen up as it heats.
  4. Finish the Dish : plate dish as pictured on front of card & Bon appétit!

Honestly, it was the simplest meal ever & it was so full of flavor! Alex & I really enjoyed prepping this meal together (even though Alex was mostly behind the camera making sure we covered the whole prepping process)! Home Chef definitely goes above and beyond to provide everything that you might need for your next meal + the quality of their ingredients speak for themselves when you take that first bite. Now that a week has passed by & we’ve tried the other 2 meals that arrived in our 1st package, I can fully say that Home Chef is definitely worth a try.
